Breakfast Casserole Muffins for Sunday Morning

Raise and Shine, it’s Sunday morning and it’s going to be a good day! Why you ask, because Breakfast Casserole Muffins are on the menu for this morning.

Why in god’s creation can I not sleep past 8am on the weekend is beyond me. I always tell myself I’m gonna sleep in til at least 9 but it never happens. This morning I was wide awake at 7:30, the dogs looked at me like, “it’s about damn time woman”. So of course I drug my rear out of the bed and decided to start my day.

Dogs have been let out, feed and watered. Coffee has been brewed and tastes so good. A load of laundry has been started along with restarting the dryer to fluff up the clothes that I didn’t get out last night. Once in a blue moon I’ll forget about them in the washer but not this time, whoop whoop!  Now to start on breakfast.

Breakfast Casserole Muffins is what I decided to make. You can’t go wrong with them, just add whatever ingredients you have in the fridge and bake em. Since I only had ham and green onions, this is what I decided to use. There have been times that I have used green peppers or yellow peppers and even turkey. Honestly, anything in these muffins are amazing.

 

Ingredients:

  • 6-9 eggs
  • 1/2 cup Shredded Cheddar Cheese
  • Diced Virginia Baked Ham
  • Diced Green Onions
  • 1/4 cup milk
  • Salt and Pepper

Directions:

  • Preheat over to 425°.
  • In a medium bowl scramble the eggs. Add the milk, salt and pepper and mix all togehter
  • Spray muffin pan with Pam, pour 1/4 cup egg mixture into each spot.
  • Add the cheese, ham and green onions
  • Bake in the oven for 15-20 minutes.

Prep Time: 10 minutes

Cook Time: 20 minutes

Breakfast Casserole Muffins

Ingredients

  • 8-10 eggs
  • Milk
  • Half a green pepper diced
  • Shredded cheese
  • Diced ham
  • Salt and pepper
  • Diced pieces of bread

Instructions

  1. Preheat oven to 400°. Spray Pam on muffin pan
  2. Mix eggs and milk together with salt and pepper
  3. Cut bread up to bite size pieces and add to the bottom of muffin pans
  4. Add green peppers, ham and cheese
  5. Pour egg mixture over top ingredients
  6. Bake in oven for 15-20 minutes.
