Raise and Shine, it’s Sunday morning and it’s going to be a good day! Why you ask, because Breakfast Casserole Muffins are on the menu for this morning.
Why in god’s creation can I not sleep past 8am on the weekend is beyond me. I always tell myself I’m gonna sleep in til at least 9 but it never happens. This morning I was wide awake at 7:30, the dogs looked at me like, “it’s about damn time woman”. So of course I drug my rear out of the bed and decided to start my day.
Dogs have been let out, feed and watered. Coffee has been brewed and tastes so good. A load of laundry has been started along with restarting the dryer to fluff up the clothes that I didn’t get out last night. Once in a blue moon I’ll forget about them in the washer but not this time, whoop whoop! Now to start on breakfast.
Breakfast Casserole Muffins is what I decided to make. You can’t go wrong with them, just add whatever ingredients you have in the fridge and bake em. Since I only had ham and green onions, this is what I decided to use. There have been times that I have used green peppers or yellow peppers and even turkey. Honestly, anything in these muffins are amazing.
- 6-9 eggs
- 1/2 cup Shredded Cheddar Cheese
- Diced Virginia Baked Ham
- Diced Green Onions
- 1/4 cup milk
- Salt and Pepper
- Preheat over to 425°.
- In a medium bowl scramble the eggs. Add the milk, salt and pepper and mix all togehter
- Spray muffin pan with Pam, pour 1/4 cup egg mixture into each spot.
- Add the cheese, ham and green onions
- Bake in the oven for 15-20 minutes.
They turned out very good! Colton was tickled to death, he loves these things.
