Buffalo Chicken Lasagna Roll Ups

As you can probably tell from many of my recipes, I’m a huge fan of lasagna. I’m also a fan of Buffalo Chicken, so combining these two together is the best thing I have ever done. You can not go wrong with Buffalo Chicken Lasagna Roll Ups.

I have come accustomed to making lasagna roll ups nowadays instead of the traditional pan of lasagna. Only because my son will eat the shit out of the roll ups. If I put a pan of regular lasagna in front of him, he complains and says that he doesn’t like lasagna at all.  And of course will refuse to eat it, and ends up making himself a bowl of soup or a sandwich.

Furthermore, these roll ups have been a lifesaver on getting Colton to eat with us on lasagna nights. Pasta is my go to on any easy recipe. I don’t think I could ever give it up. The people who go on diets and cut out carbs, including pasta, just need to be punched. Nah I’m just joking! But I honestly don’t see how they do, and all the more power to them. I know there is no way I could give up my carbs. Ya know how they say that at dinner you should only have one carb per entree, yeah well not this girl. At most times you can find at least three carbs on my plate.. lol!!!

Boil chicken until it wants to fall apart with a prick of the fork.

Cook 8-10 lasagna noodles until done

Shred chicken and add cream cheese, ranch dressing, buffalo sauce, salt and pepper. Mix well

Roll chicken mixture up in individual lasagna. Top with more buffalo sauce.

Top with mozzarella cheese and bake in the oven until cheese is melted and bubbly.


These are literally the best roll ups ever. The possibilities for buffalo chicken are actually pretty endless. I have made these several times and then I have also rolled the mixture up in whole wheat tortillas and baked in the oven. Boy were those good too!  Making Buffalo Chicken appetizers is a favorite of mine as well. When my boss was on a diet and we were taking food into work for his birthday, I decided to make Buffalo Chicken Celery snacks. They didn’t last long at all at work.

Buffalo Chicken Lasagna Roll Ups

Prep Time: 20 minutes

Cook Time: 20 minutes

Total Time: 40 minutes

8-10 roll ups

Buffalo Chicken Lasagna Roll Ups


  • 1 lb boneless chicken breasts or tenders
  • 8 oz cream cheese
  • 1/4 cup ranch dressing
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 8-10 lasagna noodles
  • 1 1/2 cup buffalo wing sauce
  • 1 cup shredded mozzarella cheese


  1. Boil chicken tenders until it shreds apart with fork. Shred chicken with fork or hand mixer.
  2. While chicken is cooking boil lasagna noodles for 7-9 minutes or until al a dente.
  3. After chicken has been shredded, add buffalo sauce, cream cheese, ranch dressing, salt and pepper.
  4. In a 9x12 glass dish, spread 3-4 spoonfuls of buffalo sauce on bottom of glass dish.
  5. Lay noodle out on counter and spoon about 2 spoonfuls of mixture onto the noodle. Spread out evenly on noodle and roll up. Add to baking dish. Repeat process until all noodles have been used up.
  6. Top the buffalo roll ups with mozzarella cheese and bake in a 350 degree oven until cheese is melted and/or bubbly. Preferably 20 minutes or so
