Another day to buy chocolate to make my ass a little bigger, why not? Happy Valentine’s Day!

The hubby and I usually don’t go all out on this day, it’s not that big of a deal to me, but when we do get each other something it’s candy, candy and more candy. Let’s just make our butts and bellies bigger and rot our teeth out more, ain’t that right Hun? Lol

We have gone out to dinner in the past for Valentine’s Day but today, since we are poor as dirt right now, we stayed in so I could cook a nice dinner for me, him and Colton.

Tonight’s dinner was another quick and easy one. Cheesy Manicotti..

Cheesy Manicotti

 

Manicotti Cheese Mixture

Cheesy Manicotti

Prep Time: 20 minutes

Cook Time: 30 minutes

Cheesy Manicotti

Ingredients

  • 6-8 Manicotti noodles
  • 1 jar Marinara sauce
  • 15 oz ricotta cheese
  • 2 cups sharp cheddar cheese
  • 1/2 cup parmesan cheese
  • 2 eggs
  • Parsley
  • Salt and Pepper
  • Italian seasoning

Instructions

  1. Preheat over to 350Β°
  2. While noodles are cooking mix all cheeses, eggs, parsley, Italian seasoning, salt and pepper together.
  3. In a baking dish, spread marinara sauce on bottom of dish.
  4. Stuff the cheese mixture into each end of the Manicotti noodles and lay on marinara sauce.
  5. Once all noodles are stuffed, cover them with the remaining marinara sauce and sprinkle with parsley.
  6. Bake for 30 minutes

For a side dish my boy wanted white rice so I whipped up a little bit of minute rice for him.

I also made some garlic bread to go along side the dish. Β It was a very good dinner!!
