My family is a big fan of pizza and lasagna, so putting these two foods together, was a pretty cool idea. So for dinner the other evening I decided to put together, Lasagna Pizza Roll Ups. Colton at first was a little skeptical, but after trying them, he enjoyed them so much, I’m pretty sure he even went back for seconds. He has always been the one that hasn’t been too fond of lasagna, except for the Taco Lasagna that I have made. Speaking of Taco Lasagna, I do need to make that again as well. Sounds like a good Taco Tuesday meal.
As always I try to make easy and simple recipes, especially during the week, cause I don’t want to be slaving over the stove all evening after working a 9 hour day at work. This recipe only took about 15 minutes to prepare and 20 minutes to bake. Definitely my kind of dinner, quick and easy! This was a very big hit with the hubby, he loved it!! Yay!!
Preheat oven to 375 degrees. Spray 9x11 baking dish.
Over medium high heat, heat olive oil. Add the onion and garlic and saute until tender, about 5 minutes. Stir in can of pizza sauce, garlic powder, salt and pepper. Bring the sauce to a boil and the reduce heat to low. Cover and let simmer until noodles are done.
Mix together ricotta cheese, Parmesan, eggs, garlic powder, salt and pepper.
Spread 1/2 of the pizza sauce evenly on bottom of baking dish.
To prepare lasagna rolls, lay out one noodle and spread it with about 2 tablespoons of the cheese filling. Lay out 7-8 pepperoni on top of cheese filling. Roll up each noodle and place in prepared baking dish with pizza sauce. Repeat until all noodles have been filled and rolled.
Top each roll with a slice of fresh mozzarella. Cover all rolls with the remaining pizza sauce.
Bake in the oven for 20 minutes or until cheese is bubbly and gooey.
