When your a mom and have a full time job it’s always a pain in the rear figuring out what to fix for dinner every evening. I’m usually pretty good about planning my week out by having a menu already lined up, but there are some days that get a little wacky and messed up. With the hubby out of town for work, me and the kids will eat light meals or cereal and ice cream lol!! Yep I’m that kind of mom, hey at least they are getting their dairy intake lol.
For last night I wanted something easy and wouldn’t take long to throw together, so I made Chicken Alfredo. Now usually I make my own sauce, this time I was like, no I’m gonna jar it tonight. There is some really good Alfredo sauce out on the shelves, I actually used Prego brand this time.
Yes Justin, there is still leftovers in the fridge for you to eat tomorrow when your home lol.
Salt and pepper
Man is that an easy list of ingredients or what lol!! 🙂
- Cook chicken with a little salt and pepper and minced garlic
- Cook noodles until tender
- Warm up the jar of alfredo sauce, I added a pinch of salt and pepper to mine
- Mix sauce with cooked noodles
- Added chicken and sprinkle with parsley
- Add a side dish of chicken stuffing
Now wasn’t that a quick and easy recipe for all you working moms? Yes it is!!! During the week I like to have as many easy and delicious meals as possible, I don’t want to be slaving over the stove for hours after working all day in the office. Now on the weekends, that’s when I like to cook just about all day long. Make big meals and all kinds of little appetizers as well. This weekend will be a good one since it’s supposed to be cold and expecting a little dusting of snow as well, ugghh.. yep that’s right snow, I’m so not ready for winter yet. 🙁
As for a quick meal, you can never go wrong with Chicken Alfredo. Oh and don’t forget the dessert, a bowl of Butter Pecan Ice Cream. Yum yum!!
To all the moms out there, fix those fast easy meals as often as you like, the kids enjoy them more then when you slave over the stove for hours on end. 🙂
