Good Sunday morning Peeps! It’s another dreary, rainy day so this gal is getting caught up on some blog posts. Today I will be featuring my One Pot Smoked Sausage, Peppers and Rice  Skillet recipe. You don’t want to miss out on this one.

I love when I can have lazy days at home, and to beat all, today it’s just me. The hubby is hunting and Colton spent the night with his friend last night, he’ll be home later this evening. So I have the house all to myself. Just me, my computer, a cup of coffee and peace and quiet. Oh crap I spoke too soon… the hubby just pulled in the driveway. Well I guess that ends my peace and quiet, cause now all I will hear is race cars making left turns. UGGHHH, Yes I hate Nascar!

Well I’m gonna push through all the background noise and get as much posted today as I can, cause during the week I’m either too tired to do anything or just not enough time in the day. But now that fall/winter is approaching, I’ll want to do more since I won’t be able to enjoy the nice weather outside. I’m not too fond of the cold weather, I could honestly go into hibernation during the winter months. Maybe one of these days I’ll move somewhere were it stays warm all year round.

One Pot Meals

 

If you like One Pot meals, you have got to check out this recipe. Its super easy and doesn’t take up much of your time either. When you’ve had a busy day at work, the last thing you want to do is slave over the stove for hours to feed your family. I love being able to have dinner ready in under an hour, half the time 30 minutes. So with this you get that under an hour meal that is delicious, fast and simple. The only thing that was cooked separately was the rice. I cooked the rice in this awesome Black and Decker rice cooker.

One Pot Smoked Sausage, Peppers and Rice

One Pot Meals
Cook smoked sausage until lightly blackened or a nice crisp has formed on the outside of sausage.

Remove sausage from pan and add peppers and onions. Cook until peppers are tender.

Remove peppers and onions and add tomato sauce, spices and cooked rice.

Once rice is soaked in tomato sauce for about 5 minutes, add the cooked smoked sausage, peppers and mix together. Heat thoroughly.

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

4-6 cups

One Pot Smoked Sausage, Peppers and Rice Skillet

Ingredients

  • 1 lb smoked sausage (kielbasa sausage)
  • 1 yellow and orange pepper
  • 1 medium onion
  • 1 1/2 cups white rice
  • 1 15oz tomato sauce
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 tsp sugar
  • 1/2 tsp basil
  • 1/2 tsp garlic powder

Instructions

  1. In a medium pan cook smoked sausage on medium high heat until slightly blackened/crispy on the outside. Remove from heat once cooked how you like and add peppers/onions to same pan. Cook until peppers and onions are tender.
  2. Add rice to your rice cooker and cook rice.
  3. Remove peppers/onions from heat once rice is complete. In the same pan add tomato sauce, cooked white rice, salt, pepper, garlic powder, sugar and basil. Bring to a boil and then add rice. Simmer for about 5 minutes.
  4. Add sausage & peppers back to the pan with cooked rice. Mix thoroughly, cook on low heat for 5-10 minutes or until heated evenly through.
