Its Thanksgiving break for the college kids, so mine is home eating all my food up. I do his laundry, provide him with money, fix him dinners and he can’t even stay home at night. What am I gonna do with this kid? Smack him, yep just smack him. LOL!!
One of his all time favorite meals has been roast and mashed potatoes. So since my boy is home for a week I decided to whip it up for him, he’s really gonna miss all this cooking when he leaves out Sunday. I’m pretty sure he has missed it for a couple months now, even though he comes home just about every weekend, I never see him much cause he is either with his girlfriend or friends.
Since I have a family of 5, I usually have to get 2 roasts. Yep 4 boys and me!
I was unable to fix him mashed potatoes, hadn’t even realized I was almost out of them, so didn’t have enough to fix, instead he got a baked potato and some mac and cheese. Heck you can’t go wrong with mac and cheese!
I used basic ingredients this time around. Thought I would try an A1 rub, which is more for pork, but oh well. I cook all this in my crock pot. Crock pots are the greatest inventions ever for working moms!!!
- Roast (I have to get 2 3lb roasts for my big family)
- A1 dry rub (rub both sides of roast)
- 4 tbsp butter
- pinch of salt & pepper
- sprinkle of minced onions
- couple of dashes of soy sauce
- 2-3 cups of water (cover the roast up)
- Add roast and all ingredients to the crock pot.
- Add water, cover the roast.
- Cook on Low 6-8 hours
- 15 minutes before its done, add egg noodles, cook until tender.
For just these simple ingredients this roast turned out very good. Simple and Easy.
