Pesto Pesto Pesto! There are so many ways to use Pesto, I don’t know what I would do without it. Today I wanted to share with everyone a simple Spinach Pesto that I threw together for my ham and cheese wraps that I took for lunch today. I made enough to last me for a few weeks, and if I run out, I’ll simply make much much more.
I have always made my own Pesto, due to the fact that it’s so easy and a lot cheaper. There’s only been one time that I’ve had to buy from the store, cause the store was literally all out of spinach. I’m mean really, why should you be out of packages of spinach. Anyways, store bought pesto is way too expensive as well. I think I had ended up paying close to $5.00 for the little 4 oz jar (seemed like 4oz, may have been a little more). Anyways, when you want fresh pesto for a certain recipe, just make your own. I honestly think you will like the taste so much more.
I know that a lot of recipes for pesto call for fresh basil. In my town I can only find little things of basil, especially at Walmart. Half the time I can’t even find it. So the only other alternative that I’ve found that works just as good is spinach. Personally I like spinach pesto a lot better. I grew basil last summer but it didn’t do as well as I expected. Even this summer I had no luck with it. I think with it being on my porch its getting too much sun. So I will find an alternate plan for next summer.
When I made my batch of Pesto I found a cute little mason jar up in my cabinet to store it in. But of course I only had one, so the rest of it had to be stored in a tupperware bowl. I will be adding more mason jars to my grocery list for future storage of my pesto
Enough with all the talking huh, let’s get started on this amazing Spinach Pesto 🙂
- 2 cups of baby spinach
- 2 cloves of garlic or a tablespoon of minced garlic
- 1/4 cup of pine nuts
- 2 teaspoons of lemon juice
- 1/2 cup of Parmesan cheese
- 1/4 cup of Olive oil
- dash of salt and pepper
- 1 tablespoon of water
- In a blender add all ingredients and blend on high speed.
- Add extra Olive oil to desired consistency. (I like mine with a smooth texture)
My favorite way to use Pesto is for ham and cheese wraps. I made some for my lunch today and they were absolutely amazing! The next thing on my list to try is Spaghetti Pesto with Sun Dried Tomatoes. Only thing is, is my family probably won’t even touch that cause they aren’t big fans of pesto. Well my youngest son loves it like me, but my hubby and 16 year old aren’t too fond of it. I think the only way I could get my hubby to try pesto is on top of a nice juicy steak. Yep, steaks are on my grocery list as well! 🙂
