Simple and easy desserts are always something I’m looking for. I’ve never been a big baker, so anything usually out of a box is what I fix for a dessert. Whether it be a chocolate cake or brownies, I can always count on Betty Crocker to help me out. When I wanted dessert the other evening, I knew I wanted to at least try to do a little baking. So Sugar Cookie Miniature Fruit Pizzas is the only thing I could think of that I would have to put some effort into.

Okay I’ll admit it, I may have cheated on the sugar cookies, cause lets face it, I’m not a good baker. Who came to my rescue this time tho? Mr Pillsbury Dough Boy did. lol  I have no shame, no shame at all for not making these from scratch. Maybe its the fact that I’m not good at measuring anything and that’s all you gotta do when baking. That’s it, that’s why I have never liked to bake. Cause you have to measure everything, instead of just throwing this and that, a dash of this and so forth to any recipe.

I’m that kind of girl that just throws all kinds of spices into something and keeps adding as the dish cooks. I don’t think that would work with flour, sugar, baking soda and so on.

Maybe one of these days I’ll get into baking, but until then I’m just gonna stick to some easy desserts that don’t require a whole lot of measuring. Oh and Mrs Betty Crocker or Mr Pillsbury Dough Boy (lol) to help me out when needed.

With this dessert, your taste buds will enjoy every bit of it. It doesn’t matter what kind of fruit or how much you have, the fresh fruit is what makes this so delicious. I was unable to find fresh strawberries that looked good, so I had to resort to frozen, but the kiwi and blueberries were very sweet. Next summer, when all fruit is at their peak, I will give this another go. But until then, I’ll settle for what I can find to make these for my family.

You can make as many or as few as you want. With my family, they are big eaters, so I knew I was gonna have to make quite a bit and I’m glad I did. There were a few left over that I was able to have with my coffee the next morning. Of course my middle son had to eat his with tea. Boy were they good even after sitting in the fridge all night.   They enjoyed these so much and I hope you will as well.

Cook Time: 12 minutes

Total Time: 27 minutes

12-16 cookies

Sugar Cookie Miniature Fruit Pizzas

Perfect dessert for the whole family. Use fresh fruit when available.


  • 1 cup blueberries
  • 1 cup sliced strawberries
  • 1 cup diced kiwi
  • 1 8oz cream cheese
  • 1 cup powdered sugar
  • 1/2 tsp vanilla
  • 1 pkg Pillsbury sugar cookie dough
  • 1/2 cup cool whip


  1. Cut cookie dough into 2 inch slices.
  2. Bake sugar cookies according to package. 325 degree for 11-12 minutes.
  3. In a medium mixing bowl, combine softened cream cheese, powdered sugar and vanilla. Mix until smooth.
  4. Dice or slice up strawberries and kiwi to desired size.
  5. Let cookies cool all the way. Once cooled spread cream cheese mixture onto the top of each cookie.
  6. Top cookie with desired amount of sliced/diced fruit and add a dollop of whip cream to top of fruit.
