Sunday ended with a bang, with BBQ Pork Nachos

Sunday morning started off with me being able to sleep in until 9:30am, and boy did that feel so good. After I finally rolled out of bed, I decided to put a pork loin in the crock pot so I could make some good ole BBQ Pork Nachos for Sunday dinner. I love pork loin so much, I usually will bake one in the oven, on slow temp, for a couple hours but since I wanted to make pulled barbecue pork, putting it in the crock pot is the easiest way for me to do it.

My husband smoked a pork butt and a pork loin a couple weekends ago at camp and they were delicious. I can’t wait til he smokes another pork butt, or even a brisket. At the store earlier this week we got a huge ass turkey breast that he’s gonna smoke this week as well. I’ll make sure to post a few pics of his smoked success.

Okay guys lets get down to the BBQ Pork Nacho recipe. Everyone has to try this once in their life, they are soooo delicious!!

 

BBQ Pork Nachos

Prep Time: 20 minutes

Cook Time: 1 hour, 25 minutes

BBQ Pork Nachos

Ingredients

  • 1 large pork loin
  • bag of nacho chips
  • shredded lettuce
  • nacho cheese (jar of cheese whiz)
  • red onions (finely sliced)
  • 1 jar of (Sweet Baby Ray's BBQ sauce)
  • jalapenos (optional)

Instructions

  1. In the crock pot, cook large pork loin on low heat for 4-6 hours. Once you can pull it away with a fork, its done.
  2. Take out of crock pot and let cool so you can begin to shred. Once cooled and shredded, add your barbecue sauce and mix well with the shredded pork.
  3. In a small sauce pan, on medium low heat, heat up the Cheese Whiz.
  4. Preheat oven to 325 degrees.
  5. Layer a large cookie sheet with your nacho chips, add shredded barbecue pork. Top with thinly sliced red onions.
  6. Bake in the oven 15-20 minutes.
  7. Add shredded lettuce and drizzle with more barbecue sauce. Once plated add your hot melted Cheese Whiz.
