My family and I love Taco Tuesdays, but we don’t like having the same ole tacos every time. I usually like to mix it up a little bit with either a casserole, fajitas or taco salads. My chicken fajitas are always a big hit and even my quesadillas were given a big thumbs up. Don’t get me wrong, I still like to stop at Taco Bell and bring home a dozen soft shell and hard shells. Yes I have to bring home both, cause a family of 5 eat like pigs. But fixing your own always taste so much better.

When I wanted to try something different, a casserole came to mind. I’ve always seen Taco Casserole’s but have yet to try and make one. You can never go wrong with a casserole tho. The casserole that I threw together may be pretty close to a regular taco casserole, just a change with black beans and corn added. I thought about trying hard shell tortillas, but wasn’t sure how it would turn out. Next time though I will mix it up and go with the hard shells instead of soft shells.

I made a big dish of this, but of course my youngest son wouldn’t even try it cause it looked to much like lasagna. And you know how he is with lasagna. Only way he will eat lasagna is in the roll ups form. So I better stick with the fajitas and quesadillas from now on. lol!

Brown ground beef with onions, drain and then add cans of tomatoes, black beans, corn, taco seasoning, salt, pepper, garlic powder and water.

Add ground beef, bean and corn mixture.

Top with shredded cheddar cheese and jalapenos (optional).

Continue with the layers, about 3 layers will do. Top with more shredded cheese, green onions and basil.

Bake in 350 degree oven 20-25 minutes.

All the ingredients for this recipe were bought at WalMart, except for the taco seasoning. All my spices are bought from Raw Spice Bar. Cook Time: 25 minutes

Total Time: 45 minutes

4-6 people

Tortilla Layered Mexican Casserole


  • 2 lbs ground beef
  • 1 medium onion
  • 1 15oz can diced tomatoes
  • 1 14oz canned corn
  • 1 14oz can black beans
  • 6 tortillas (soft)
  • 1 14oz enchilada sauce
  • 3 tablespoons taco seasoning
  • 2 cups shredded cheddar cheese
  • 1/4 cup sliced jalapenos
  • 1 bunch green onions
  • 2/3 cup water
  • 1/2 tsp salt, pepper and garlic powder
  • 1/4 tsp basil


  1. Cook ground beef and onion on medium high heat until cooked all the way through. Drain off fat and return to pot.
  2. Add tomatoes, corn, black beans, salt, pepper, garlic powder and taco seasoning.
  3. In a 9x13 baking dish, add 3-4 tablespoons of enchilada sauce to dish. On top of that add 2 soft tortillas. Cover tortillas with ground beef mixture and top with cheese.
  4. Continue process with 2 more layers. Garnish with green onions and basil.
  5. Bake in a 350 degree over for 20-25 minutes.
