Oh boy has it been a crazy last couple of weeks. I know I have been missing in action, but this girl needed a little break from the blogging world. For the past year I have been none stop with it, so a couple weeks off was a good thing. So to jump back into things, I would like to share my all time favorite dish. My crock pot Creamy Potato soup is hands down the easiest and most delicious!
I hope every one had a fabulous Christmas, I know my family and I did. It was pretty hectic the last couple of days before Christmas morning, but everything went smooth and nothing too dramatic happened. My boys got pretty much what they were asking for and more. And I ended up scoring on quite a bit of Pioneer Woman merchandise. All in all it was a great holiday, well except for my husband being ill on Christmas morning. There is a bad case of the flu going around in our area, and it seems like everyone is sick.
Those everyone’s that are sick, can stay far far away from me. I had the crud back on Thanksgiving Day and the whole weekend after Thanksgiving. So no, I do not want it again. The only problem I keep having is to do with all the cold weather. Either I’m down in the back or my carpal tunnel starts to act up. I will say tho, that I found an amazing cream online that has helped me tremendously with my carpal tunnel. The product is NextRelief Pain Relief Cream and it has worked wonders on Justin and I. Justin has bad back problems, so when the weather starts getting cold I rub his back all down with NextRelief and it helps him out so much. Okay, so let’s get started on this amazing and delicious Creamy Potato Soup!
Like all my meals, I like easy and simple. And to beat all, if you don’t want to put all this in your crock pot, you can always do on the stove top. My thing is getting up early on Saturday or Sunday morning, putting all my ingredients into my crock pot and go about my day with no worries. And ladies there is not much clean up except for the crock pot, and stick those soup bowls in the dishwasher and forget em. If you don’t have a dishwasher, put the hubby and kids to work. I mean you did slave over this Potato Soup all day long. 🙂
Creamy Potato Soup
Ingredients consist of:
- 1 32oz bag frozen Ore Ida diced hash brown potatoes
- 1 medium chopped onion
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 2 tablespoons butter
- 4 cups chicken broth
- 1 can cream of chicken soup
- 8oz pkg cream cheese
- shredded cheddar cheese (optional)
- turkey bacon pieces (optional)
- chives (optional)
- Combine all ingredients into crock pot except for cream cheese & shredded cheese
- Mix well and cook 6-8 hours on low
- Add the cream cheese and continue to cook for 45 minutes
- Stir until soup is smooth
- Add soup to your favorite soup bowl and add shredded cheese
- Top with turkey bacon pieces and chives, if desired
Now if this doesn’t look good to you, then there is something wrong with ya. lol! Believe me, I use to not like potato soup at all. But the older I get, my taste buds are constantly changing and I’m willing to try more and more foods that I hated when I was a kid. Just adding a few simple ingredients like butter and garlic powder to a recipe, always makes a huge change. But hell I’m like Paula Dean, the more butter the better. 🙂
