Whoever doesn’t like bacon is Un-American, lol!! Bacon is the greatest thing, even if it is turkey bacon. 

Tonight I put together a delish side dish to go with the deer steaks and salad that I was preparing. Yep you guessed it, it includes bacon!! I only needed about 6 pieces but this girl decided to fix the whole pack so I could munch on while I cooked dinner, oh and so the hubby could munch on too.

Bake potatoes and then spoon out insides
Bake potatoes with oil, salt and pepper for 45-60 minutes

Turkey Bacon Stuffed Taters!

Prep Time: 25 minutes

Cook Time: 30 minutes

Turkey Bacon Stuffed Taters!

Ingredients

  • 4-5 large Russet Potatoes
  • 6-8 pieces of turkey bacon
  • 1/4lb deli sliced turkey breast
  • 1/2 cup sour cream
  • 1/2 cup of chicken broth
  • 1 1/2 cup shredded cheddar cheese
  • Green onions diced

Instructions

  1. Preheat oven to 425°
  2. Scrub potatoes, prick them several times with a fork, place on baking sheet. Drizzle olive oil and season with salt and pepper. Bake in the oven for 45-60 minutes.
  3. While potatoes are cooking, cook up your turkey bacon and warm up the deli sliced turkey breast in a skillet, 1-2 minutes is totally fine.
  4. After the potatoes have cooled enough to handle, cut each in half and scoop out the insides and add to mixing bowl.
  5. Add the sour cream, chicken broth, green onions and 1/2 cup cheddar cheese to the bowl and mash the potatoes, season with salt and pepper
  6. Fold the turkey and bacon into mashed potatoes and add filing into potato skins.
  7. Top with a little extra cheese and return to oven for about 5 minutes to melt the cheese. Bon appetit!
