It’s breakfast time again, and your wondering what your gonna make for your family once again on Sunday morning. Don’t fret my friends, this easy Cast Iron Skillet Breakfast Casserole is gonna be the perfect recipe for you guys. If by chance you don’t have a cast iron skillet, no worries, you can use a regular baking dish. But I would highly recommend getting yourself a cast iron skillet.
I use my skillet for everything. Yes they are a lot harder to cook with, due to the heat retention, but they are easy to clean up. For example, when cooking a grilled cheese sandwich, you don’t have to turn the heat up on 6 or 7. Cause yes it will burn the shit out of the sandwich. Also when cooking scrambled eggs or sunny side up eggs, don’t forget to keep the heat on medium to low. And lots of butter or oil. I have had my eggs stick to the skillet like no other. LOL! Aside from all that I have not had any other issues with mine. Just takes a little getting use too.
As long as you keep your cast iron seasoned you won’t have any problems. That’s what caused a few of my foods to stick to the bottom, cause I hadn’t gotten it completely seasoned right. There are several articles on Pinterest that will tell you how to keep them properly cleaned and seasoned. I also watched a couple videos on YouTube as well to make sure I was doing it correctly. Now that you are all ready to go with your clean and seasoned Cast Iron Skillet, let’s make this delicious casserole.

First thing I did was added 2 tablespoons of butter to the skillet. Second thing, I chopped up half of a green pepper and cut bacon into bite sized pieces. There were 8 eggs used and I mixed those using a Mason Jar with Pour Lid (this is honestly the easiest way to mix eggs together). I added about 1/4 cup of milk, dash of salt and pepper and mixed thoroughly with the eggs. Once I poured the egg mixture into the skillet I added the green pepper and bacon.
I then topped with 1 cup of Shredded Cheddar Cheese.
Lastly, I baked in a 350° oven for 30 minutes.
It doesn’t get any better than that, does it. You can cut the pie into small pieces or large pieces. Since it was just the hubby and I who were home, I cut into 4 large pieces and served with a side of sausage patties. Yum Yum!!
