Casserole’s during the week are always my go to dinners. They are not only yummy but they are delicious and simple. My family’s favorite casserole of all times is Chicken Casserole with Stove Top Stuffing. I would say this is probably my favorite as well. If I don’t fix this meal at least once every two weeks then my youngest son gets mad. He absolutely loves this casserole and pigs out on it.

I have always used Stove Top for my stuffing. Yes I know it’s nothing close to homemade, but its just a quick side dish to whip up during the crazy week. I have always wanted to make my own stuffing, just have never gotten around to it. I’m sure one of these days I’ll try it and then never go back to Stove Top. But until then, Stove Top is my go to.

If you don’t and need a quick and easy recipe for one of those crazy week days, then you need to try this dinner out. I will fix a mess of mashed potatoes to go along side the casserole. Perfect dinner for sure.

Cut up chicken into bite size pieces and a small onion. Mix together a can of cream of chicken soup, 2 tablespoons of butter, 1 cup of chicken broth, salt and pepper and pour over chicken.

Add a cup of shredded cheddar cheese to the top of chicken and soup mixture.

Prepare two boxes of Stove Top Chicken Stuffing according to box instructions. Add to the top of chicken and soup mixture.

Bake in a 350 degree oven for 40-45 minutes.

That’s all that there is to it. This simple and fast casserole will go as quick as you put it all together. My family usually devours it in no time. But of course I always have to get in there and make a plate to take for lunch the next day. Hope you and your family enjoy as much as my family does.

Total Time: 55 minutes

Chicken Casserole with Stove Top Stuffing

Ingredients

  • 1lb chicken (breasts or tenders)
  • 1 can of cream of chicken soup
  • 2 boxes of Chicken Stove Top Stuffing
  • 1 small onion
  • 2 tablespoons of melted butter
  • 1 cup of chicken broth
  • 1 tsp salt
  • 1 tsp pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. Cut chicken up into bite size pieces. Preheat oven to 350 degrees. Spray a 9x13 baking dish with Pam.
  2. Add chicken and small diced onion to baking dish.
  3. In a medium bowl, mix together cream of chicken soup, melted butter, chicken broth, salt and pepper.
  4. Cook stove top stuffing according to box instructions.
  5. Pour soup mixture over chicken and top with shredded cheese. Once stove top stuffing is done, layer it over the chicken and soup mixture.
  6. Bake in 350 degree oven for 40-45 minutes.
