Are you tired of having the same taco dinner for Taco Tuesdays? Well now you don’t have too, try this Tortilla Layered Mexican Casserole for your next Taco night.
My family and I love Taco Tuesdays, but we don’t like having the same ole tacos every time. I usually like to mix it up a little bit with either a casserole, fajitas or taco salads. My chicken fajitas are always a big hit and even my quesadillas were given a big thumbs up. Don’t get me wrong, I still like to stop at Taco Bell and bring home a dozen soft shell and hard shells. Yes I have to bring home both, cause a family of 5 eat like pigs. But fixing your own always taste so much better.
When I wanted to try something different, a casserole came to mind. I’ve always seen Taco Casserole’s but have yet to try and make one. You can never go wrong with a casserole tho. The casserole that I threw together may be pretty close to a regular taco casserole, just a change with black beans and corn added. I thought about trying hard shell tortillas, but wasn’t sure how it would turn out. Next time though I will mix it up and go with the hard shells instead of soft shells.
I made a big dish of this, but of course my youngest son wouldn’t even try it cause it looked to much like lasagna. And you know how he is with lasagna. Only way he will eat lasagna is in the roll ups form. So I better stick with the fajitas and quesadillas from now on. lol!

All the ingredients for this recipe were bought at WalMart, except for the taco seasoning. All my spices are bought from Raw Spice Bar. These fresh ground, organic spices are flipping amazing. The taco seasoning from Raw Spice Bar is so much better than the store bought kind. Here is where you can get some..
